Pea Salad (Ms. Lucy's Cajun Classroom)
Ingredients 1 large can early peas, drained 1/2 medium onion, grated salt & pepper to taste 2 boiled eggs, peeled & chopped 1/2 cup mayonnaise Directions Grate onion over peas in a bowl. Add rest of ingredients. Mix thoroughly. Refrigerate or serve immediately (better if left standing for a couple of hours).
