For Leah Gibson of Boxcar Farm and Garden in Maxwell, Texas, farming is all about community. She met her husband, Gabe, while working in a college community garden. Since then, the couple and several like-minded friends are becoming the next generation of agriculture producers in the Austin area. They regularly band together to help with chores and to share what they've raised.
The land for Boxcar Farm and Garden had been overgrazed but the couple is committed to restoring the soil by raising pigs, turkeys, and chickens -- all of which they process. In fact, Leah often teaches others in the area about processing. After receiving a small grant, the Gibsons installed an orchard and water-wise design on their 11-acre property. The goal for the orchard is to help feed their pastured hogs which they process and sell to families. You can follow their progress on their website and check out photos below.
