As celebrated in today's Google Doodle, today is the birthday of the man credited both with creating and lending his nickname to everyone's favorite south-of-the-border appetizer/snack. According to Google, Ignacio Anaya García (aka "Nacho") came up with the confection on the fly one day in 1943, to satisfy the craving of a group of U.S. military wives who stopped by the restaurant in the border town of Piedras Negras, Coahuila, where García worked as Maître d'.

"Nachos Especiales," soon made it onto the restaurant's regular menu, then were featured in a cookbook, and the rest, as they say, is history.

Some of our very own programmers here at RFD-TV have their own variations on the classic dish. Paula Deen has developed multiple iterations, including Sheet Tray Nachos, Seafood Nachos, and Macho Nachos. And our friends at "California Bountiful" have come up with their own muy trendy version: Poke Nachos!
