Strawberry Nut Cake
Recipe from Larry Eavey of Richmond, Va.
Total Time: 1 1/2 hours
1 box white cake mix
1 cup oil
1/2 cup milk
1 cup crushed pecans
1 cup stawberries, cut in small pieces and drained well if using frozen
1 cup coconut
1. In mixer add oil to cake mix. Then add milk, eggs, strawberries, pecans and then coconut mixing well.
2. Pour into 10 x 13 greased baking pan and cook for 35-40 minutes at 350 degrees.
3. After cake cools mix one box confectioners sugar with 1 stick of softened butter or margerine and then 1/2 cup each of strawberries, pecans and coconut. Spread on cool cake.
Yield: 16-20 servings
