Justin Wilson Looking Back: Baked Broiled Chicken

Serves 4 people


  • Olive oil
  • 4 chicken halves
  • 3 tablespoons of steak sauce
  • 3 large cloves of garlic, peeled
  • 1 cup of dry white wine
  • 1 cup of water
  • 1 teaspoon of dried mint
  • 1/2 cup of dried parsley
  • 1 medium-sized onion, quartered
  • 3 cups of ground walnuts


Preheat the broiler. Grease a large broiler pan with olive oil and place the chicken halves in the pan, then broil until almost cooked through.

While the chickens are broiling, mix together the remaining ingredients except for the walnuts. When the chickens are about done, sprinkle the walnuts over them, then the wine mixture.

Turn the oven temperature down to 300 degrees and cook until the chickens are cooked all the way through, basting often.
