Five fresh watermelon recipes for the summer

The U.S. sells about 2.8 billion pounds of watermelon every year, and while it can be enjoyed on its own there is much more that can be done with this perennial summertime favorite.

Fresh Mozzarella Watermelon Salad

INGREDIENTS

2 cups seeded small watermelon cubes
2 cups fresh mozzarella pearls
1 cup chopped fresh basil (purple or green)
1-2 tbsp trimmed and chopped scallions
1/3 cup extra virgin olive oil
Pinch salt and pepper to taste
Dash balsamic vinegar as desired
2 cups mixed greens

INSTRUCTIONS

Toss together the watermelon, mozzarella, basil, scallions and oil.
Season with salt and pepper to taste.
Serve over a bed of baby greens. Drizzle a bit of balsamic vinegar over if desired.

Breakfast Banana Split

INGREDIENTS

1 Banana
2-3 Scoops of watermelon from half a watermelon (whole or mini)
1/3 cup chocolate granola
1/2 cup berries of choice (strawberries, raspberries, blueberries)
1/2 cup strawberry yogurt
Coconut shreds, for topping (optional)

INSTRUCTIONS

Peel banana and split lengthwise into two halves. Arrange on plate/bowl.
Using an ice cream scoop, scoop into half a watermelon and put three put scoops of watermelon on top of banana.
Add granola, berries and optional topping.
Drizzle yogurt on top.
Enjoy!

Patriotic Charcuterie Board

INGREDIENTS

½ medium watermelon, cut into a combination of wedges and cubes
½ cup raspberries
1 ½ cups blueberries
5 ounces goat cheese
½ cup toasted salted cashews
2 ounces various cured meats • meats like prosciutto, pancetta, coppa, salami, soppressata, sausage or pepperoni
1 honeycrisp apple cored and sliced
Lemon juice
Fresh basil

INSTRUCTIONS

Arrange the ingredients on a large board or platter. Drizzle all the fruit with lemon juice. Garnish with a few basil leaves. Serve and enjoy!

Watermelon Cake

INGREDIENTS

1/2 medium watermelon
1 container Cool Whip
Strawberries, Blueberries and Blackberries for decorating

INSTRUCTIONS

Cut watermelon with a flat side for the bottom of the cake.
Blot watermelon repeatedly with paper towels to remove access moisture and to allow whipped topping to stick (otherwise topping may slide).
“Frost” your cake with cool whip.
Decorate with strawberries, blueberries and blackberries as desired.

Savory Watermelon Pizza

INGREDIENTS

1 watermelon round cut into 1” (for crust)
Goat cheese
1 tablespoon heaving whipping cream
Prosciutto
Balsamic glaze
Greens of choice
Pepper to taste

INSTRUCTIONS

In a small bowl mix goat cheese and heavy whipping cream to make it spreadable.
Spread goat cheese to cover watermelon leaving room to hold the rind.
Place prosciutto then greens as toppings on watermelon pizza as desired.
Drizzle balsamic glaze on watermelon pizza. Pepper to taste.
