Consumers say yes to ham this season. Demand is up across the US, as well as exports to China. That’s thanks in large part to the Asian outbreak of African Swine Fever.
The increase of export and national demand has pork processors running full speed ahead at 493,000 head per day, MeatingPlace reports. The all-time daily record was set in October of this year and was less than 200 head higher. As a result, American consumers will be paying a premium this year to put pork on the table.
