Justin Wilson Looking Back: Avocado Dressing

Serve up this tasty avocado dressing as seen on an episode of Justin Wilson Looking Back.

Serves 4 people

Ingredients:

  • 2 ripe avocados
  • 3 tablespoons of red wine vinegar
  • 3 tablespoons of mayonnaise
  • 3 tablespoons of olive oil
  • 1 tablespoon of soy sauce
  • 1/2 teaspoon of cayenne pepper

Instructions:

Peel the avocados, cut in half, pit, and mash the avocado meat well. Pour a little of the vinegar over the avocados to keep them from turning brown. Mix together with the other ingredients, stirring after each addition.

Serve over a mixed green salad. If it does not pour easily enough, add more mayonnaise.
