Justin Wilson Looking Back: Ham Salad

Serves 4-6 people

Ingredients:

  • 1/4 cup of mayonnaise
  • 2 tablespoons of olive oil
  • 1 tablespoon of Worcestershire sauce
  • 1 tablespoon of Durkee’s Famous sauce
  • Salt to taste
  • Louisiana hot sauce to taste
  • 1 pound ham, ground in a good processor
  • 3 tablespoons of dill relish, drained
  • 2 cups of chopped purple onions or regular onions if you can’t find purple

Instructions:

Make the dressing by combining the mayonnaise with olive oil and beating it back to its original consistency. Add the Worcestershire and Durkee’s and peat to combine, then season with salt and hot sauce. Mix in the ham, dill relish, and onions, and combine thoroughly.
