Serves 6-8
Ingredients:
- 5 1/2 cups of water
- 1 cup of regular grits
- 1 cup of pecan meal
- 3 tablespoons of margarine or butter
- 2 teaspoons of salt
- 1/2 teaspoon cayenne pepper
Instructions:
Place 2 cups of water in the bottom of a double boiler, turn the heat to medium-high, and let it come to a boil. Meanwhile, in the top of the double boiler, combine the remaining 3 1/2 cups water, the grits, pecan meal, margarine, salt, and cayenne.
Bring to a boil directly over a medium-high fire, stirring constantly.
Turn the heat to low and continue cooking until the grits begin to thicken, about 20 minutes, stirring occasionally. Put the pot of grits on top of the boiling water, reduce the heat to low, and simmer for 30 minutes.
Serve Hot.
