The harvesting of maple syrup is under way in Canada and off to a strong start. The Director of the Ontario Maple Syrup Producers Association said that the syrup this year not only has a heavier rate-of-flow but also a greater sugar content, especially for this early into the season.
Quebec supplies more than 70% of the world’s maple syrup.
