Evolving U.S. demographics are shifting consumer poultry preferences from white meat to dark meat, presenting the poultry industry with an opportunity to diversify its profit centers.
Joining “Market Day Report” by phone, Will Sawyer, Economist for Cobank, says that automation is a big factor in current poultry processing, enabling producers to be nimble and efficient as they seek to take advantage of the shifting preferences. Sawyer also predicts that, if the trend continues, white meat will find its way into more and more processed chicken products.
Whichever way the pendulum swings in terms of domestic tastes, Sawyer expects the U.S. to retain its place as the world’s number two exporter of poultry.
