We have another amazing recipe from Mr. Justin Wilson!
Serves 8
Ingredients:
- 1/2 cup of olive oil
- 1 cup of chopped onions
- 1/2 cup of chopped bell peppers
- 1 cup of chopped green onions
- One 16 ounce can whole-kernel corn, drained
- One 10 ounce can Rotel spiced tomatoes
- One 16-ounce can whole or 1 pound fresh tomatoes (cut up)
- One 16 ounce can baby limas or butter beans, drained
- 1 cup water
- 2 teaspoons of chopped garlic
- 1 1/2 pounds smoked sausage sliced
Instructions:
Heat the olive oil in a medium-sized pot over a medium fire. Add the onions and bell peppers and cook, stirring, until the onions are clear, then add the rest of the ingredients and cook, covered, until everything is done.
About 45 minutes.
