Justin Wilson Eazy Cookin': Rabit Gumbo

We have another amazing recipe from Mr. Justin Wilson!

Serves 10


  • 1 1/2 cups of olive oil
  • 1 1/2 cups of sifted all-purpose flour
  • 2 cups of chopped onions
  • 1/2 cups of chopped celery
  • 1 cup of chopped bell peppers
  • 1/2 cup of chopped fresh parsley
  • 1 tablespoon chopped garlic
  • 4 cups of water
  • 2 tablespoons of steak sauce
  • Louisiana hot sauce to taste or 1 teaspoon of cayenne pepper
  • 2 cups of dry white wine
  • One 2 pound rabbit, cut into serving pieces
  • 1 pound andouille or smoked sausage


In a large pot, heat the oil over a medium fire, then add the flour and make a very dark roux.

Add the onions, celery, and bell peppers and cook, stirring constantly until the onions are clear. Add the parsley, garlic, water, steak sauce, hot sauce, and wine, then drop in the rabbit meat and sausage.

Stir to combine, then let cook, covered, for two or more hours.
