Justin Wilson Lookin’ Back: Leg of Lamb

Serves 9-11 people

Ingredients:

  • One 12 1/2 pound leg of lamb
  • Garlic cloves, peeled
  • Garlic powder to taste
  • Salt to taste
  • Cayenne pepper to taste
  • Creme de menthe as needed

Instructions:

Build a fire on top of the Cajun microwave and place a pan of water under the grill.

Poke holes in the leg of lamb with small sharp knife and stuff them with garlic cloves. Pat the leg with the garlic powder, salt, and cayenne, then pour the creme de menthe over it and rub it into the lamb. Place the leg of lamb on the grill, pull down the lid, and cook until fork-tender, 5-8 hours.
