Justin Wilson Looking Back: Mashed Potato Casserole

Serves 8 people


  • Olive oil
  • 2 cups of sliced onions
  • 4-5 cups of mushrooms, cut into large pieces
  • 2 tablespoons soy sauce
  • 1/2 cup of dry white wine
  • 6 cups of mashed boiled and peeled potatoes
  • 3 cups of grated cheddar cheese


Heat enough olive oil to cover the bottom in a large ovenproof pan over a medium fire. Add the onions, then add the mushrooms, soy sauce, hot sauce, and wine and cook, stirring, until the onions and mushrooms are tender. Stir the potatoes into the sauteed mushroom mixture and cover with the grated cheese.

Place in a preheated 350-degree oven for 20 minutes.
