Serves 12 people
Ingredients:
- 2 cups of dry white wine
- 1 cup of honey
- 1 teaspoon of vanilla extract
- 1 teaspoon of ground cinnamon
- 2 cups of raisins
- 4 extra-large eggs
- 8 cups of cooked brown rice
Instructions:
Combine the wine, honey, vanilla, and cinnamon in a medium-size saucepan. Heat slowly over a low fire until the honey melts, then add the raisins and bring to a boil. Remove from the heat and let cool for about 30 minutes.
Preheat the oven to 325 degrees. Beat the eggs real well and combine with the rice in a large mixing bowl. Pour the honey-and-wine mixture over the rice and combine well.
Butter a 9x12 inch baking pan, then pour in the pudding mixture.
Bake until browned, about 1 hour. Keep an eye on it, and don’t let it burn.
