Justin Wilson Looking Back - Duck in a Bag

Serves 6-8 people

Ingredients:

  • 3-4 wild ducks (large ducks like mallards)
  • Salt to taste
  • Red ground cayenne pepper to taste
  • 6 large apples (Quartered with seeds removed)
  • 2 cups onion (finely chopped)
  • 1 tablespoon of garlic (finely chopped)
  • 1 cup of parsley (finely chopped)
  • 2 cups of red or dry white wine

Instructions:

Cut duck down the back and clean real well. I reckon all the feathers have already been removed. Salt and pepper duck and place in a large roaster that can be covered. Add the rest of the ingredients with additional salt and pepper.

Preheat oven to 350 degrees. Place covered roaster in oven and bake for two hours.
