Serves 8-10 people
Ingredients:
- 1 cup of olive oil
- 1 1/2 cups of chopped onions
- 1 cup of chopped green onions
- 1 cup of chopped bell peppers
- 1 1/2 cups of chopped fresh parsley
- 6-8 cups of sweet corn cut and scraped off the cob
- 1 tablespoon of chopped garlic
- 1 1/2 cups of dry white wine
- 1 1/2 cups of water
- 2 tablespoons of steak sauce
- 2 tablespoons of picante sauce
- 2-3 cups of chopped mushrooms
- Salt to taste
Instructions:
In a large frying pan, heat the olive oil over a medium fire. Add the onions, green onions, bell peppers, and parsley and cook, stirring until the onions and bell peppers are tender.
Add the corn and stir, then add the garlic, wine, and water and stir.
Add the steak sauce and stir. Add the picante sauce and stir. Add the mushrooms.
Reduce the fire to low, cover, and simmer for about 1 hour. Add salt to taste.
