Justin Wilson Looking Back: Oyster Soup

Serves 4 people


  • 2 cups of oyster juice
  • 8 cups of water
  • 1 cup of chopped onions
  • 1 cup of chopped green onions
  • 1 tablespoon chopped bell peppers
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon of Louisiana hot sauce
  • 1 tablespoon of salt
  • 1 teaspoon of dried mint
  • 2 dozen shucked oysters


Put all the ingredients except the oysters in a large pot and cook for 30 to 40 minutes at a nice simmer.

Add the oysters, cook for another 15 minutes, and serve.
