Perfect for the Holidays: Reba McEntire’s Banana Pudding Recipe

Reba McEntire is a country music legend with an astonishing career. While you might not get an invite to Reba’s Thanksgiving dinner, you can try her recipe for Banana Pudding.

Ingredients:

  • 3/4 cup of granulated sugar
  • 1/3 cup of corn starch
  • 1/2 teaspoons of salt
  • 3 cups of milk
  • 3 eggs
  • 1 1/2 teaspoon of vanilla extract
  • 1 teaspoon of almond extract
  • 40 vanilla wafer cookies
  • 4 medium bananas (thinly sliced)
  • 1 cup of heavy cream
  • 1 teaspoon of confectioner’s sugar
  • Additional vanilla wafers and sliced bananas for garnish (optional)

Instructions:

Butter 2 quart serving dish or bowl. In a pot combine the first three ingredients. Stir in milk until smooth. Over medium heat, cook stirring until sugar melts, about 5 minutes.

In a bowl, lightly beat eggs. Stir the egg mixture into the pot of milk mixture. Cook, stirring until the custard thickens, about 10 minutes.

Remove from heat. Stir in 1 teaspoon of vanilla and a half teaspoon of almond extract. Line the bottom of the dish with 20 wafers. Top with half of the bananas and then half of the custard. Repeat layering with the remaining cookies, bananas, and custard to form one more layer.

In a bowl with a mixture at high speed, beat cream, confectioner’s sugar, and remaining extracts until peaks form.

Spoon in dollops around the edge of the dish.

Chill for at least 2 hours and garnish if desired.
