Three delicious fruit dessert recipes perfect for summer

Summertime is full of family gatherings and outside eating. Fresh fruits from either your own garden or the local Farmers’ Market are always great summer treats. Here are three delicious fruit dessert recipes you can try for your next get-together!

Strawberry Shortcake Skewers

Ingredients

16 (2"x1") chunks of count cake

16 medium strawberries (leaves removed)

1 and a half cups and 2 tablespoons of confectioner’s sugar

1 cup heavy cream

Half a teaspoon of pure vanilla extract

(Vegetable oil for the grill grates)

Instructions

Prepare a grill for medium-high heat. Toss the pound cake, strawberries and the 1 and a half cups of sugar in a large bowl, until the cake and berries are coated well on all sides. Thread a piece of cake and strawberry onto a skewer, repeat 3 times. Set the skewers on a rimmed backing sheet.

Whisk together the cream, the vanilla, and the remaining 2 tablespoons of sugar. Cover and refrigerate.

Oil the grill grates and place the skewers on the grill, and cover it (until they have light marks or about 1 min.). Flip them and continue to grill, covered, until the cake and strawberries are toasted with grill marks and the sugar starts to bubble and harden. Serve with the whipped cream on the side.

Peach and Plum Galette

Ingredients

3 medium peaches (skin on and sliced)

3 plums (skin on and sliced)

1 pie crust

Flour

1 egg whisked with 1 tablespoon of water

1 tablespoon of sugar

Instructions

Preheat the over to 375 degrees. Roll out your pie crust on lightly floured parchment paper. Arrange the slices of fruit in the center working your way out (leaving a 2 inch border of crust). Fold the crust edges up and over the fruit. Transfer to a baking sheet.

Brush the dough with egg wash and sprinkle with sugar.

Bake for around 30 minutes, until the fruit center bubbles and the crust is golden brown.

Apple Pie Bites

Ingredients

Quarter cup (packed) of light brown sugar

1 teaspoon and another quarter teaspoon of apple pie spice

3 tablespoons of unsalted butter (melted)

Third of a cup of chopped pecans

1 small Granny Smith apple (cored and sliced into 8 slices)

1 tube of Pillsbury Original present rolls

Instructions

Preheat the oven to 375 degrees. Line a baking sheet with parchment paper. In a small bowl, combine the brown sugar and apple pie spice and set aside. Melt the butter and toss apple slices in, then set it aside.

Arrange present roll triangles on the baking sheet. Evenly distribute brown sugar mixture on to each triangle. Sprinkle each triangle with chopped pecans.

Place apples on the wide end of the triangles and wrap the roll dough around the slice. Brush each roll with remaining butter and sprinkle with remaining apple pie spice.

Bake for 10-12 minutes, or until golden brown.
