The USDA says the almost 56 billion pounds was up slightly from 2020, and it included an all-time high for beef production at 28 billion pounds.
Commercial cattle slaughter was also up 3% at 34 million head.
Iowa, Kansas, Nebraska and Texas processed half of all commercial red meat production last year.
