Justin Wilson Looking Back: Chicken A La Justin

Serves 4-6 people


  • 2 fryers
  • Salt
  • Black Pepper
  • Cayenne Pepper
  • Olive Oil
  • 4 cups of onions (chopped)
  • 1 chopped shallots or green onions (chopped)
  • 1 cup of bell peppers (chopped)
  • 1 cup of celery (chopped)
  • 2 cups of parsley (or 1 cup dried parsley), (chopped)
  • 1 small can of pimiento
  • 4 cups Sauterne wine or dry white wine
  • 2 tablespoons of Worcestershire sauce
  • Dash of Louisiana Hot Sauce


Preheat oven to 375 degrees.

Cut up chicken as if to fry. Season with salt, black pepper, and cayenne pepper.

Pour olive oil in bottom of baking pan. Arrange chicken in pan. Sprinkle with the chopped onions, bell pepper, celery, and parsley.

Cut pimiento in strips, and place on chicken. Mix wine, Worcestershire sauce, and hot sauce; pour over chicken.

Bake uncovered until chicken is browned, approximately 1 1/2 to 2 hours. Baste frequently. Add water if needed.
