Makes 8-10 servings

Ingredients

  • 8 cups cut up okra
  • 2 cups canned chopped tomatoes
  • 2 cups chopped mushrooms
  • 1 cup dry white wine
  • 2 cups mushroom stock (See Note)
  • 2 tsp chopped garlic
  • 1 lbs crawfish tails, peeled

Instructions

Combine all ingredients, except for crawfish, in a medium sized pot over a medium fire and cook until the okra is tender. Stir in the crawfish tails and let cook for an additional 20 minutes.

NOTE: To make mushroom stock, take 1 lbs whole cleaned mushrooms and boil them with 6 cups of water until you have 2 cups stock left.
