USDA’s Economic Research Service recently released data showing that the majority of U.S. potatoes are now processed.
The numbers show that the share of potatoes going into frozen products has gone up every decade since 1979, and it is mostly for French fries.
Much of that is credited to quick-service restaurants which account for about 2/3 of fry usage and the pandemic, as per capita frozen potato availability during 2019 to 2021 was up 8 percent from a decade earlier.
