Demand for potatoes is growing so much production can’t keep up

Worldwide demand for potatoes is increasing and experts say it is outpacing production.

The president of Potatoes USA says 20 years ago, the U.S. held 55 percent of the global potato export market. Now, it is just 23 percent, but he says during that time we have doubled exports, and now global demand is growing more rapidly than production can handle.

U.S. potato export sales were up 9 percent last year and are sitting 29 percent higher this time five years ago.
