Cheesy Garlic Mashed Potato Bake

Justin Wilson makes a warm and cheesy Southern-style mashed potato casserole seasoned with garlic, onion, and cayenne. It’s baked until golden and bubbling, making it the perfect comfort food side dish.

COOK TIME: 50 minutes

TOTAL TIME: 1 hour

Ingredients

  • 5 cups of peeled and cut-up Irish potatoes
  • 1 Tablespoon of salt
  • Onion powder, to taste
  • Garlic powder, to taste
  • Cayenne pepper, to taste
  • 2 teaspoons of Olive Oil
  • 2 cups of grated cheddar cheese
  • Toppings (optional):

    • Green onions or chives, finely chopped

Cooking Instructions

  1. Preheat the oven to 350 degrees.
  2. In a medium-sized pot, boil the potatoes in salted water to cover, seasoned with onion, garlic powder, and cayenne pepper, until tender. (About 20 minutes.)
  3. Drain and mash the potatoes. Place the potatoes in an oiled casserole dish and cover with cheese.
  4. Bake uncovered for 30 minutes.
