Brent Williams is a Kentucky man who developed a life-threatening allergy to red meat due to tick bites, called alpha-gal syndrome. The allergy excludes seafood, poultry, chicken, turkey, eggs, and oddly enough, ostrich meat.
According to AP News, many who have the same allergy are turning to ostrich meat due to its similar taste to beef. A pound of ground ostrich meat can cost more than $20 and choice cuts rounding up to $40.
Williams says those with the allergy who try an ostrich burger are nearly in tears because of how much they have longed for a “burger” again.
His farm, Alpha Roost Farms, has a barn with hatchlings of the birds, Native to Africa, and are the world’s largest weighing more than 300 pounds, standing at nine feet tall. He plans to double his herd to 700 by the end of 2027. It
