Traditional ingredients in this Mediterranean Beef and Salad Pita, like feta, olives, and pita bread, will transport you directly to Greece! The addition of ground beef also gives this salad a protein-packed punch.

INGREDIENTS

  • 1 pound of ground beef
  • 1 medium red bell pepper, deseeded and chopped
  • 4 cups of romaine lettuce, chopped
  • 1/3 cup crumbled feta cheese with herbs
  • 1/3 cup prepared Italian dressing (not creamy) or vinaigrette
  • 1/4 cup of pitted Kalamata olives, chopped
  • 4 pita breads, toasted

COOKING INSTRUCTIONS

  1. Heat a large non-stick skillet over medium heat until hot. Add the beef and bell pepper and cook for 8-10 minutes. Break the beef into crumbles and stir occasionally.
  2. Remove the cooked ground beef from the heat and pour off the drippings.
  3. Add the lettuce, cheese, dressing, and olives to the beef mixture and toss.
