Despite its name, this recipe is very American. London Broil is made with Top Round Steak, marinated for hours in a flavorful mixture, broiled in the oven, and served with a delicious herb butter.

Ingredients

  • 1 beef Top Round Steak (about 2 lbs. and cut 1-1 1/2" thick)
  • For the Marinade:
    • 3/4 cup of reduced-sodium beef broth
    • 2 tablespoons of fresh lemon juice
    • 2 tablespoons of olive oil
    • 1 tablespoon of soy sauce
    • 1 tablespoon of Worcestershire sauce
    • 1 teaspoon of kosher salt
    • 1/2 teaspoon black pepper
  • For the Herb Butter:
    • 4 tablespoons of butter (softened)
    • 1 tablespoon of fresh, chopped chives
    • 1 tablespoon of fresh, chopped parsley leaves
    • 2 teaspoons of fresh, chopped tarragon or chervil
    • 2 teaspoons of fresh lemon juice
    • 1/4 teaspoon of salt and pepper (each)

Cooking Instructions

  1. For the Marinade:
    1. Combine marinade ingredients in a small bowl.
    2. Place the beef and marinade in a plastic bag; turn to coat.
    3. Close the bag securely and marinate in the refrigerator for at least 6 hours.
  2. For the Herb Butter:
    1. Combine herb butter ingredients in a small bowl, mixing well. Cover and refrigerate until ready to use.
  3. Remove the steak from the marinade (discard the marinade). Pat the steak dry with paper towels. Then preheat the broiler. Place steaks on a rack 3-4 inches from the heat and broil for 27-29 minutes for medium rare (145 degrees), turning once.
  4. Carve the steak into thin slices and top with herb butter.
