Greek-Style Beef Pita

You’re gonna need a bigger pita. Season thin-sliced Sirloin with lemon pepper and skillet-cook, then pile it into hummus-filled pita pockets and top with your favorite veggies.

Servings: 4 pita sandwiches

Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

  • 1 lb. Sirloin Tip beef steaks, cut 1/8-1/4" thick
  • 1 1/2 tablespoons lemon pepper and salt
  • 2-3 teaspoons vegetable oil, divided
  • 3/4 cup hummus
  • 4 whole wheat pita rounds, cut in half
  • Optional toppings:
      • Sliced Kalamata olives
      • Sliced red onion
      • Sliced cucumbers
      • Feta cheese crumbles

Cooking Instructions:

  1. Stack beef steaks; cut lengthwise in half, then crosswise into 1" wide strips and place in a medium bowl. Season the meat with the lemon pepper and salt, tossing with tongs to coat the slices evenly with the seasonings. Set aside.
  2. Heat 2-3 teaspoons of oil in a large nonstick skillet over medium-high heat.
  3. When the skillet is very hot, add half of the sliced beef and stir-fry the meat for 1 to 3 minutes, until the outside surface of the beef is no longer pink, but taking care not to overcook.) Remove from the skillet.
  4. Repeat with the remaining beef, adding another teaspoon of oil to the skillet if necessary.
  5. Slice the pitas into half-moons and lightly toast the bread.
  6. Carefully spread the hummus inside pita pockets, not breaking them. Fill with equal amounts of beef and any desired toppings.
